Sticky BBQ Meatball ‘Pizzas’

    Method

    1. Pre-heat the oven to 200°C/390°F.
    2. Using your hands, combine the minced beef in a bowl with the onion, garlic, origanum, breadcrumbs and egg and generously season with salt and black pepper.
    3. Form the minced beef mixture into approximately 25 to 30 small meatballs.
    4. Heat a large frying pan on a medium-high heat, pour a few tablespoons of olive oil in the pan and fry the meatballs in batches for approximately 5 minutes or until they are golden brown all over.
    5. In the meantime, combine all the BBQ sauce ingredients in a medium size bowl and season well with salt and freshly ground black pepper. Set aside.
    6. Add the meatballs to the BBQ sauce and toss to evenly coat the beef.
    7. Place the tortillas/wraps onto a baking tray and lightly brush with oil. Top with mozzarella chunks, BBQ meatballs and vine tomatoes.
    8. Bake in the preheated oven for about 10 minutes or until the meatballs are sticky and the cheese is melted and turning golden. Keep an eye on the tortillas to ensure they don’t burn.
    9. Sprinkle parmesan cheese over the pizzas and garnish with fresh basil leaves. Serve whilst hot!
