Greek Salad Steak Sandwich

Cooking guideline based on 3cm thick steak

  • Rare: 4 minutes on each side
  • Med-rare: 5 minutes on each side (recommended)
  • Medium: 6 minutes on each side
  • Well-done: Not recommended

Substitute sirloin with fillet or rump steak

  1. Begin by making the marinade. Mix all the marinade ingredients in a bowl until well combined and pour into a zip lock bag.
  2. Transfer the sirloin steak to the zip lock bag with the marinade and turn to coat. Place in the refrigerator for 2 to 24 hours to marinate.
  3. Pre-heat the oven to 200°C/390°F.
  4. In the meantime, prepare all of the fresh ingredients for the salad and combine in a large bowl. Set aside.
  5. Remove the steak from the marinade and grill on a hot fire or griddle pan, turning to cook on both sides to your preferred doneness (see cooking guideline above).
  6. Leave the meat to rest for half its cooking time before slicing into thin slivers.
  7. Drizzle olive oil over both cut halves of the olive ciabatta bread, place in the pre-heated oven and bake for 5 minutes until lightly toasted on the outside but still soft in the middle.
  8. Scatter the salad ingredients and caramelised steak slices onto the bottom half of the ciabatta loaf, season with salt and pepper, drizzle over olive oil, top with the lid of the ciabatta bread and cut into portions sizes of your choice.


  • 300g sirloin steak
  • 25g baby herb leaves
  • 80g exotic tomatoes, halved
  • 1/4 cup sundried tomatoes
  • 1/2 red onion, thinly sliced
  • 50g kalamata olives, pitted and halved
  • 1 disc feta cheese, crumbled
  • Olive ciabatta loaf, sliced lengthways
  • Salt and freshly ground black pepper
  • Olive oil, for drizzling


  • 1/2 cup olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp balsamic vinegar
  • Juice of half a lemon
  • 2 garlic cloves, crushed
  • 2 tsp dried origanum
  • Salt and freshly ground black pepper
