Creamy Tomato Soup with Meatballs
Method
Combine the mince and onion, then add the remaining ingredients, except the oil. Mix well and shape into 16 - 20 meatballs.
Fry the meatballs in shallow oil until light brown, then drain on kitchen paper. Set aside.
For the soup, heat the tomatoes, stock, parsley and seasoning in a heavy-based saucepan, add the meatballs and simmer for about 15 - 20 minutes.
Stir in the cream, heat through, and serve hot with crusty bread.
