Creamy Beef Risotto

Arborio is a short-grain rice that imparts a creamy texture to classic Italian risotto, which is traditionally cooked slowly in stock.

    Method

    1. Heat the olive oil in a large, heavy-based saucepan and fry the steak until cooked to your liking. Remove from the heat and rest until ready to slice.
    2. Add the butter to the pan and sauté the onion and garlic until soft. Add the mushrooms and red pepper and fry for about 2 minutes until soft.
    3. Stir in the rice, tomato paste and seasoning. Add the stock a ladleful at a time, waiting until the stock has been absorbed before adding another ladleful. Simmer for about 30 minutes. Continue stirring until almost all the liquid is absorbed and the rice is no longer chalky.
    4. Stir in the cheese and basil and top with succulent steak slices.
