Coriander Koftas With Lime Tzatziki

    Method

    1. Start by making the lime tzatziki. Combine the yoghurt with the cucumber, garlic, mint, lime juice and season to taste with salt. Add more lime juice if required and refrigerate until needed.
    2. To make the koftas, add the minced beef, onion, garlic, paprika, cumin, ground coriander and fresh coriander to a bowl, season well with salt and pepper and mix thoroughly.
    3. Using your hands, shape the beef mixture into balls about the size of golf balls.
    4. Thread each ball onto a metal or soaked wooden skewer and squash into a sausage shape. The mixture should make around 12 koftas.
    5. Brush oil on the koftas and grill on a hot fire or griddle pan, turning occasionally until cooked through and brown on all sides, about 6 minutes. Cook in batches if necessary.
    6. Slice each pita bread lengthways into two and warm in a griddle pan for about 30 seconds to 1 minute, flipping and repeating on the second side.
    7. Spread the lime tzatziki over the warmed pita bread and top with shredded cabbage, carrots and coriander koftas.
    8. Garnish with fresh mint and serve with lemon wedges.
