Beef Stew with Ginger and a Hint of Coconut

    Method

    1. Heat the oil in a heavy-based saucepan and brown the Beef until golden.
    2. Add the onion and garlic and sauté until soft. Stir in the spices, seasoning, stock, lemon juice and bring to the boil. Cover, reduce heat and simmer for about 1 hour or until the Beef is tender.
    3. Place the roast on a chopping board and leave to cool slightly. Using two forks, pull the Beef apart to create a shredded texture and return to the saucepan.
    4. Pour in the coconut milk and simmer for a further 20 minutes. If necessary, thicken the sauce with a paste of flour and water. Serve with basmati rice.
