    Method

    1. Heat the oil in a heavy-based saucepan and brown the Beef until golden.
    2. Sauté the onions, garlic, and ginger until soft. Add the spices and fry for a further 2 minutes, stirring constantly.
    3. Stir in the stock and seasoning and bring to the boil. Cover, then reduce heat and simmer for about 1 hour or until the meat is tender.
    4. Add the potatoes and simmer for a further 20 minutes. Garnish with coriander and serve with rice, poppadoms, and a salad.
